They also step in and take charge of the kitchen in the absence of the Executive Chef.

They should be familiar with kitchen health and safety regulations and often require food handling certification. Typical roles a person might hold before advancing to a Sous Chef position include Line Cook, Chef de Partie or Junior Sous Chef. Formal culinary education, such as a degree from a culinary institute, along with several years of practical experience in the kitchen, are normally required to be considered for a Sous Chef position.
