Large operation with anywhere from 100 to 120 cast members to manage at one time. Extremely high expectations for cleanliness food production sanitation timing of food. My side Ohana does 1350 covers every morning with about $60000 dollars in sales for breakfast only. We are the second busiest location next to chef mickeys at Disney world. Some of the challenges is having enough food to feed that many people making sure we are staffed appropriately holding cast accountable for cleanliness or running out of food. Aside from the business aspect we take the cast out on bowling trips, or ore importantly they get to go behind the scenes and see how the rides operate and what makes them run. We also do iron chef challenges where 2 cast members will take on a sous chef the cast have a blast with this it really builds their confidence.
